MOM’S COSMIC DINER MISO DRESSING
2 Cups filtered water
1/3 Cup safflower / canola oil
1 Cup organic carrots
1/3 Cup onion
2 Tblsp umeboshi plum vinegar or apple cider vinegar
3 Cloves of garlic
3 Tblsp raw tahini (sesame seed paste)
3-4 Heaping tblsp mellow miso (can add more)
½ Squeezed lemon
Optional: 1/3-cup fresh cilantro
Put all the ingredients in a blender and puree. Store in glass container and refrigerate. (Can be stored in refrigerator for 2 weeks).
